How to Make a Bunny Cake


A home made fluffy bunny cake is simple to make by following these step-by-step instructions.

From making a cake board to display your classic creation, to frosting and detailing with ease ...

I make this adorable bunny cake to celebrate each Easter.

Let the kids get into the act, too and make some great holiday memories!




~ How to Make a Bunny Cake ~



INGREDIENTS:

One Cake Mix of your choice

Two Containers Ready-Made Frosting - white

One package shredded coconut

Food Coloring
Red Licorice Whips
Foil-wrapped Easter eggs
Multi-colored jelly beans
One Strawberry, halved

Cake Board



METHOD:

1. Bake two 8 or 9 inch cake layers as directed. Remove from pans and let cool completely. While you’re waiting, make a cake board to display your beautiful cake creation.

2. Freeze the layers for about ½ hr. prior to frosting. This will make them less crumbly and easier to frost. Just place them in large resealable bags and place on a cookie sheet in the freezer. Check here for more Cake Baking Tips.

3. Next, cut the two bunny ears and bowtie from one of the layers, as shown in the drawing below.

4. Position the uncut round layer on your cake board with ears on top and bowtie below to resemble a bunny's head. Frost ears and head white, reserving about a cup of frosting for the bowtie.

Tip:  The cut sides of the ears and bowtie will require more frosting to cover the open sides. You might wish to use this easy base frosting recipe as a "primer" beneath the final frosting layer. It makes a frosting that is thin and easy to spread.

5. Place 1/2 cup coconut in a ziploc bag and add a drop or two of red food coloring.  Shake until coconut turns uniformly pink.  Sprinkle the entire bunny with white coconut, adding the pink coconut to the insides of the ears as shown.  Press coconut lightly to adhere to frosting. 

6. Add a few drops of blue food coloring to reserved frosting until you achieve a nice shade of robin's egg blue.   Frost top and sides of bunny's bowtie.  Scatter colored jellybeans on the bowtie to give a polka-dot effect.

7. Add purple foil-covered eggs for bunny's eyes and a pink egg for the mouth.  Red licorice whips cut into two-inch pieces make bunny's whiskers.  One half of a firm ripe strawberry forms the nose.
